We are a husband-and-wife team from Scotland. French European trained but stay grounded when it comes to the produce, from Sea to Land to plate.
Our culinary travels have helped us both gain knowledge and respect native ingredients and use them to as much as our capabilities when it comes to our Scottish heritage, culture and sustainability of the land.
Our menu will reflect the garden, sea and the land which we will showcase from the restaurant. We will be working together with local Tasmanian producers to promote what the land offers.
We acknowledge the oyster bay, paredarerme people, the traditional custodians of the land we are on today and we pay respect to the elders past, present and emerging.
